Red wine sauce
Instructions
Toasted the bones and stew, add the smells, cut into large chunks, skin and half of the onions, abbrustolendo.
Turn off the cooking with the metè of wine, add the tomato paste, sprinkle the flour, continue frying, pour the bottom, add the herbs and cook for 2 hours.
Mix the red wine sauce and onions, and seasoned.
Red wine sauce and onions: Cook 15 cl red wine with 50 g of finely chopped onions, till you get a kind of syrup.

- 500 g of beef bones
- 1 skin
- 250 g of beef stew
- 100 g of smells
- 100 g of onions
- 1 tablespoon of tomato paste
- 30 cl of red wine
- Laurel
- Thyme
- Peppercorns
- 150 cl of brown fund
- 25 g of flour
- 50 g of olive oil
- Salt
