Crusted salmon
Instructions
In a pan saute the onion in oil, add the chopped tomatoes, mushrooms, basil, salt, pepper and cook for 20 minutes.
Roll out with a rolling pin the dough, form a rectangle, sprinkle with half the mushrooms, lay the drained salmon fillets, cover with the remaining mushrooms, pasta, rolled close fine edges and drill small holes, with 2 small cardboard funnels so that the steam comes out during cooking.
Arrange the crusted salmon on aluminum foil and cook in the oven at 150 degrees until the dough is golden.
Serve immediately.
Recommended: wines of Oltrepò Pavese Riesling or Ischia.

- 340 g of salmon fillets in olive oil
- 250 g of frozen puff pastry
- 2 tablespoons of olive oil extra virgin
- 1 spring onion thinly sliced
- 100 g of private tomato seeds
- 200 g of sliced mushrooms
- 1 tablespoon of chopped basil
- Salt
- Pepper
