Clean, degrease and dry well 1000 g of loin of veal.
Place the meat on a lightly greased baking dish with oil and butter and cook in the oven already warm to 150 degrees for 40 minutes, turning the piece of meat every now and then.
Never add salt while cooking, nor Pierce ever meat with a fork.
Serve hot, sliced thin, with steamed vegetables, or cold, garnished with lemon juice.
