Marinade partridge
Instructions
Salt inside and out the partridges.
In a pan heat four tablespoons of olive oil, lay the birds and Brown for 10 minutes, turning often.
Pepper.
Place in a baking pan with the onion and a clove of minced garlic, pepper and diced celeriac, two bay leaves, peppercorns, wine and vinegar.
Cook covered over low heat for about an hour, if necessary, add a little hot broth.
Let cool the partridges and serve at the table with their vegetable sauce.
Accompanying wines: Terrano Del Carso DOC, Carmignano DOCG, Aglianico Del Vulture DOC "reserve".

- 4 partridges
- 30 cl of dry white wine
- 30 cl of wine vinegar
- 1/2 celeriac
- 1 red pepper
- 1 onion
- 1 clove of garlic
- Broth
- 2 leaves of laurel
- 4 tablespoons of olive oil
- Salt
- Peppercorns
