Rock ptarmigan
Instructions
Brown in 150 g butter 4 partridges clean, wash and dry.
Season with salt and cover with boiling water.
Let simmer for 1 hour, then add 1 cup of cream, juice of 1/2 lemon and let simmer for another 45 minutes, stirring often.
Halve the partridges, arrange them on a serving dish and sprinkle with the cooking done restrict lively flame.
Serve immediately with baked potatoes.
