Penne with eggplant and sausage
Instructions
Pour the oil in the Pan, saute the onion, add the sausage and FRY for 2-3 minutes.
Pour in the wine and let it evaporate into focus.
Add the diced eggplant, bell pepper, chili and FRY.
After 5 minutes add the tomatoes, oregano, salt and pepper.
Cover and cook for 20 minutes.
Add the parsley and minced garlic and cook another 7/8 minutes.
Drain the pasta and season with the sauce after removing the chilli.
Serve hot dusting of Parmesan.
Ingredients and dosing for 4 persons
- 300 g of type pasta penne
- 1 eggplant
- == 1 finely chopped onion
- 2 tablespoons of olive oil
- 100 g of crumbled sausage
- 1/2 cup of dry white wine
- == 1 red pepper, diced
- 1 bit of chili
- 400 g of tomatoes peeled and chopped san marzano tomatoes
- 1 pinch of oregano
- 1 bunch of chopped parsley
- 1 clove of garlic
- 4 tablespoons of grated parmesan cheese
- Salt
- Pepper
