Liver pâté sandwiches
Instructions
Whip the cream.
Mash with a fork the paté and add the Madeira and the chili; mix well, add the whipped cream.
Taste, add salt and pepper if necessary.
put in the refrigerator.
Cut the sandwiches and hollowed-out shell inside, leaving 1 cm on the bottom and crumbs around.
Fill buns with dressing, cover with the cups and serve.
Suggested wine: Cannonau di Sardegna.

- 1 pinch of cayenne
- 2 tablespoons of madeira wine
- 10 cl of cream
- 250 g of liver paté
- 4 sandwiches to milk
