Cod with olives and potatoes
Instructions
Boil the codfish for 5 minutes in boiling water.
Drain, cut into spellatelo and some threads.
Set the oven at 220 degrees.
Meanwhile, heat olive oil and saute the onions with the garlic and parsley until they are wilted.
Add the fillets of salt cod and potatoes and cook for about 10 minutes.
Transferred everything in a serving dish and garnish with eggs and olive washers.
Ingredients and dosing for 4 persons
- 625 g of salt cod soaked
- 4 tablespoons of olive oil
- 4 sliced onions
- 3 cloves of garlic
- 2 teaspoons of chopped parsley
- 400 g of boiled potatoes and cut into 2.5 cm cubes of side
- Salt
- Freshly ground black pepper
- 3 hard-boiled eggs cut into wedges
- 12 green olives pitted and sliced
