This soup, also common to other regions, often has different ingredients just because it is your prerogative to use seasonal vegetables on the spot.
In a crock pot, lightly oiled, stewed onions, celery and sliced fresh tomatoes.
After about 30 minutes, merged with the water already hot vegetables, salt and some rosemary leaves, chopped.
While the soup bubbles (still 5 minutes will suffice), beat the eggs and pour over the slices of bread which you first made toast and placed in individual dishes and Diners.
Cover in fine bread and beaten egg with hot soup and serve.
