Macco di fave
Instructions
Soak the beans for 1 night.
In a clay pot containing 100 cl salt-water dip thinly sliced onions and tomatoes without seeds and cut into cubes.
Add the beans and cook covered pot and simmer for about 2 hours.
Remove the pot from heat and with a wooden spoon to crush (dent) the beans.
Apart from Cook pasta and blend it with the mashed potatoes.
Drizzle with olive oil, freshly ground pepper and pecorino.

- 250 g of dried peeled fava beans
- 1 tropea red onion
- 300 g of blanched and peeled ripe tomatoes
- 200 g of mixed paste type pulp
- 10 cl of olive oil
- Ground black pepper
- Grated pecorino cheese
