Jerusalem artichoke salad
Instructions
Peel the Jerusalem artichokes, wash them, dry them, cut them into very thin slices, put them in a salad bowl.
Clean the artichoke hearts and sliced them thinly, spray them with lemon juice and add them to the Jerusalem artichokes.
Add the carrot, cut into julienne.
Emulsified In a bowl four tablespoons of olive oil with two of lemon juice, salt and pepper.
Pour flush in the salad bowl, stir gently, and serve.
