White bean salad
Instructions
Cook the beans in a quart and a half of water for half an hour (let them soak overnight if they are dry).
Drain them, place them in a bowl and let cool.
Remove seeds and filaments with peppers and cut them into strips.
Peel and chop the onion and garlic, cleaned and cut into julienne the carrot and combine all the beans.
Add salt, pepper, oil and vinegar, mix well, sprinkle with parsley and serve.

- 200 g of white beans
- 1 carrot
- 1 onion
- 1/2 green pepper
- 1/2 red pepper
- 1 clove of garlic
- 3 tablespoons of olive oil
- 2 teaspoons of wine vinegar
- Parsley
- Salt
