The quantity of sugar shown in the ingredients is purely indicative, in fact it depends on the volume of the egg white used and must be amended accordingly.
Put 170 g of sugar and the egg white in a bowl, perfumed with lemon juice, then knead the ingredients with a whisk or electric mixer; Add the rest of the sugar when the mixture will be smooth and soft.
Continue to work until the frosting reaches optimum consistency, i.
e.
when they are obvious circles left by whips on its surface.
Arrived at this stage cover the Bowl containing the icing with a damp cloth to prevent the surface from drying out.
