Stewed Mushrooms (Funghi Stufati)
Instructions
Clean the mushrooms and cut the stalks but not the chapels, flush them and dip them in salted water with the juice of 1 lemon.
Slice the onion and let it wilt in oil and butter then join ben dried mushrooms, bay leaf, pepper and a handful of chopped parsley.
Cover and cook over medium heat for 15 minutes, then season with salt and sprinkle with lemon juice.
Continue cooking for another 10 minutes.

- 800 g of mushrooms
- 2 lemons
- 1 scallion
- 1 leaf of laurel
- Olive oil
- Butter
- 1 teaspoon of peppercorns
- 1 handful of chopped parsley
- Salt
