Fried mixed vegetables
Instructions
Peel, wash and dry the vegetables.
Cut the aubergines and courgettes and sliced Zucchini, remove the ends.
Peel and place them on a tray slightly slanted so that, after being salted liberally, lose their water.
Meanwhile, Peel, wash and dry the potatoes.
Cut them into sticks.
Blanch the tomatoes and peppers for a few seconds, drain and Peel.
Delete both seeds and pith of peppers.
Heat the oil in a large frying pan.
Then FRY the aubergines and courgettes.
Heat the oil in another pan and fry the peppers and potatoes.
When all vegetables are cooked, place them in a saucepan, add the tomatoes and two cloves of garlic sprouts.
Add salt and Cook, stirring occasionally for at least an hour.
When cooked cutlery the mixed fry of vegetables in a serving dish and serve hot.
