Lucanian pancakes
Instructions
In a saucepan, bring to the boil water with a pinch of salt, bay leaf and olive oil.
Remove from heat, Add flour all at once and stir with a wooden spoon.
Put on the stove and cook over low heat for about 10 minutes, stirring to eight, so you always pass through the Centre of the pan.
When the mixture is smooth and compact, remove the bay leaf, then pour it on a plate off slightly wet or greasy, level it and let it cool.
Cut into diamond shapes and FRY in hot oil.
As soon as the pancakes are golden brown, drain on a paper towel, place them on a plate, sprinkle with icing sugar and serve.

- 250 g of white flour
- 1 tablespoon of semolina
- 50 cl of water
- 1 leaf of laurel
- 3 tablespoons of olive oil
- Salt
- Frying oil
- Icing sugar
