Arista of pork with spices
Instructions
Pound in a mortar in stone until reduced to a paste: 1 tbsp grain mustard, 1/2 head of garlic (peeled cloves), 5 slices of ginger 1 cm thick.
Mix with 1 tablespoon of white wine, 1 teaspoon honey and 1 tablespoon of olive oil.
Apply this paste on all faces of an arista of pork.
Put 2 tablespoons of vegetable oil in the bottom of a baking dish that can go in the oven and the flame, lay the roast.
Cook in the oven at 220 degrees (depending on size of roast) approximately 75 minutes.
Add salt halfway through the cooking, get a golden crust.
Wrap roast in aluminum foil and let rest in a warm for about 20 minutes.
Degrease the Pan and deglassarne the bottom with 1 and 1/2 cup of broth, and 1/2 glass of rum.
Boil and reduce by half.
If desired, assemble the sauce with the whip with 50 g very cold butter cut into small pieces.
Slice the meat, pour over the sauce and serve hot.

- 50 g of very cold butter cut into pieces
