Arista of pork with cream sauce
Instructions
Logs the arista with cloves of garlic and a dozen of cloves and rub, tying the meat, with a thin white line, a sprig of Rosemary.
Place the pork in a baking dish, sprinkle with olive oil and put it in the oven already warm to 200 degrees.
After 10 minutes, turn the meat and Brown it well on each side.
Meanwhile, beat in a Bowl a quarter of cream with a glass of strong liquor (cognac, rum or grappa depending on your preferences).
When the pork bake for 30 minutes, reduce the oven to 170 degrees and lapped in one fell swoop with cream and liqueur.
Continue cooking for another 30 minutes, making sure that the cooking is not too dry and turning the meat occasionally.
If the sauce is reduced too much, very little warm water together.
Finally, add salt and pepper to taste, tasting the sauce.
Remove the meat from the bowl, switch the Blender cooking sauce, slice the meat, cover it with the sauce and the dish in the oven for a few moments before serving warm.
