Marinated anchovies to sambenedettese
Instructions
Flour and FRY in plenty of boiling oil, the anchovies, drain and season with salt.
In a small saucepan bring to boil the vinegar with garlic, mint leaves and hot pepper.
In a bowl place the fried anchovies forming different layers and, on top, pour boiling vinegar along with all the aromas, to rediscover the fishes.
Let stand for 24 hours in the refrigerator before serving.
You can keep for a few days.

- 500 g of clean and fresh anchovies have been boned
- 2 fists of flour
- 2 cloves of crushed garlic
- 1 sprig of mint
- 1 == Pto Chili Powder
- 2 cups of red wine vinegar
- Olive oil extra virgin
- Frying oil
- Salt
