Sun's pancakes
Instructions
Deleted from the corn liquid.
In a bowl, beat the eggs with a pinch of salt.
Together, stirring with a fork, grated Parmesan cheese, white flour and chopped thyme.
Add the corn and let it sit for 2 or 3 minutes.
In a pan put a little olive oil.
Pour the mixture in spoonfuls into the oil to form pancakes of about 5 cm in diameter.
Cook on both sides and just cooked, appoggiatele on paper towels to dry.
Garnish with a cherry tomatoes cut in half and a sprig of fresh mint.
