Instructions
Peel and wash the leeks, cut into rings and then let them dry in a pan with a tablespoon of oil, add salt and pepper, add chopped parsley and garlic and stir.
Remove from heat and add the boiled potato.
In a bowl beat the eggs with the grated Parmesan, salt, pepper and milk.
At this point add the potato mixture and leeks and reshot.
Grease with a tablespoon of oil in a nonstick pan, heat it and pour in the mixture.
Cook the omelette 5-7 minutes per side and rigiratela with a large lid or with a plate.

- 5 eggs
- 2 leeks
- 1 boiled potato
- 1 clove of garlic
- 1 sprig of parsley
- 2 tablespoons of grated parmesan cheese
- 3 tablespoons of milk
- Olive oil
- Salt
- Pepper
