Fried vegetables
Instructions
Cut into thin slices sweet pepper and onion and zucchini slices.
Let them add a few tablespoons of olive oil in a pan for 15 minutes covered and over low heat.
Beat the eggs, add salt, pepper, buckwheat flour and chopped parsley.
Pour the mixture over vegetables and let thicken.
Then cook the omelet on the other side.
Serve.

- 4 eggs
- 1 tablespoon of buckwheat flour
- 1 red pepper
- 1 courgette
- 1 onion
- 1 sprig of parsley
- A few tablespoons of olive oil
- Salt
- Pepper
