Beat the egg yolks with 90 g sugar to obtain a smooth, then add the egg whites until stiff.
Heat the butter, pour in the mixture, go in the oven at moderate heat for 15 minutes, making sure the surface colors too.
Unmold the cake and sprinkle with sugar.
With a hot iron to carve on the surface, pour the brandy declined, becomes inflamed and serve still on fire.
