Shrimp omelette
Instructions
Cook for about three minutes shrimp, olives, parsley, rice, cayenne pepper and salt.
In a bowl beat the eggs, salt and white pepper.
Put in a pan with the butter and cook until the bubbles are formed.
Then sprinkle the surface with the egg mixture and shrimp.
Sprinkle with Parmesan cheese.
Cook for seven or eight minutes, lifting the edges of the omelet every now and then.
Cut into quarters and sprinkle with lemon juice before serving.
Ingredients and dosing for 4 persons
- 250 g of shrimps
- 12 chopped black olives
- 1 tablespoon of parsley
- 130 g of rice
- 1 teaspoon of cayenne pepper
- 1 teaspoon of white pepper
- 2 teaspoons of butter
- 5 eggs
- 4 tablespoons of parmigiano-reggiano
- 1 teaspoon of lemon juice
