Omelette with Sage (2)
Instructions
Peel the brain and cut it into small pieces.
Skin the sausage and sbrisciolatela.
Finely sliced shallots, minced garlic and saute in a tablespoon of oil and 10 g of butter with Sage.
Add the brain and FRY to live 3 minutes inlaid egg.
Add salt and pepper, turn off and remove the Sage.
With a fork, beat the eggs in a bowl: add salt, pepatele, add the sausage and the brain with their cooking and stir.
Pour the mixture into a greased pan with a tablespoon of oil, cover and let thicken eggs on one side.
Turn the omelette with a dish or a cover and finish cooking on the other side.
