Omelette with truffles
Instructions
Carefully clean the truffles, by wiping them with a small brush to remove any remaining soil and then with a wet cloth, then dry them with a cloth and grattugiateli.
Break the eggs into a bowl, add a pinch of salt and four tablespoons of cream and beat with a whisk until mixture is smooth, then add the grated truffles.
You heat the oil in a frying pan, pour in the egg mixture and truffles and let thicken for 5-6 minutes, then turn the omelet and allow it to cook for the same time on the other side.
Serve hot, wet it with a few drops of lemon juice and garnished with sprigs of parsley and truffle slices.
If you're not very skilled, you can cook the mixture into four times, using of course a small frying pan, so you get four omelets from serving.
In doing so it will be easier to turn the omelet and allow it to cook in the proper place, so that it is on the outside and soft Golden inside.

- 5 eggs
- 100 g of black truffles
- 4 tablespoons of cream
- Salt
- 4 tablespoons of olive oil
- 1/2 lemon
