Anchovies in saor
Instructions
Carefully clean the anchovies.
Liberatele of head and fishbones, wash them and dry them gently; put them in flour and fry them in a cast iron pan in the hot oil.
When they are golden brown on both sides, remove them with your paddle and then soak them on absorbent paper, why lose the excess grease.
In another saucepan, pour in the meantime 4 tablespoons oil and saute gently, thin sliced onions until it will be imbiondite (but not begin to darken), cover with 2 little glasses of white wine vinegar and let simmer for 3 minutes.
Arrange in layers, then in a ceramic bowl or glass the fried anchovies; distributed over each layer a little onion, pinenuts and sultanas (made earlier finding in warm water and then well squeezed) and sprinkle with a little hot vinegar.
Pour over the fish finally the remaining vinegar, so that they can be well covered by the aromatic sauce.
Ingredients and dosing for 4 persons
- 600 g of fresh anchovies
- 25 cl of frying oil
- 2 large onions sliced thin
- A few tablespoons of flour
- 4 tablespoons of olive oil
- 2 glasses of white wine vinegar
- 50 g of pine nuts
- 40 g of sultanas
