Tuna flan with leek sauce
Instructions
Puree half the tuna with egg yolks.
Carefully fold the egg whites firm.
Pour into a bowl, add the remaining chopped tuna, salt and pepper.
Stir.
Grease a mould.
Pour in the mixture and bake in a water bath in a preheated oven at 180 degrees for 45 minutes.
Clean the leeks, cut into slices, season for 20 minutes over low heat with a knob of butter and two tablespoons of cream.
Add salt and pepper.
Put the flan and nappatelo with Leek sauce.
Sprinkle with chopped parsley.
Serve immediately.

- 4 leeks
- 2 tablespoons of cream
- 1 walnut butter
- Salt
