Boiling salted water (with lemon, 2 means 1 glass of vinegar and some bay leaf) the Sweetbreads and grains.
After 10 minutes add the strands.
When the water boils, remove from heat and allow to cool in the same water.
Nectar and then the grain.
Apart boil for 20 minutes the crests of cock.
Make a sauce with abundant oil, butter, onion and 2 Bay leaves, adding strands, Sweetbreads, diced, cockerel crests of gallo, cucumbers and mushrooms into small pieces.
Fry gently again and add the Marsala wine and allow it to reduce.
Adjust with roast sauce, salt and Worcestershire sauce.
If the roast sauce, replace it with broth and meat extract.
Pepper lightly and serve in baking dish or vol-au-vent.

- 100 g of chicken small ridges

- Dry marsala wine
- Roast sauce
- Worcestershire sauce
- 1 lemon
- 1 glass of wine vinegar
- 2 leaves of laurel
