Sole fillets in sauce (3)
Instructions
Cook the mushrooms with a knob of butter, parsley, half a glass of water, bringing to a boil.
Pour the sole covering them with a mixture of half water and half white wine, add thyme, bay leaf, finely chopped shallot, salt and pepper; Bake for 10 minutes.
Remove the sole from their cooking sauce and place them on a plate.
In a pan put cooking sauce of soles and cooking mushrooms sauce adding us 2 tablespoons cream and 2 egg yolks.
Cook until the sauce becomes thick.
Then frullateci 3 tablespoons cream and 50 g of butter.
Cover with this sauce sole and garnished with mushrooms.
