Fillets of sole to the mullet
Instructions
Grated bottarga first, then put in a saucepan the comic and vinegar and then reduce.
Pour into another bowl cream and then reduce this.
Merge to cartoon the egg yolks and whisk vigorously with a fork while cooking in a Bain-Marie.
In a pan melt the butter and you then pour it slowly into the saucepan with the other ingredients; Add, at the end, the cream.
Put the sauce in a baking dish, arrange over the fillets of sole, powder of mullet and put in oven at 180 degrees.
Let it cook for 15 minutes, until the surface is golden.
Bakes and serve immediately.

- 12 sole fillets
- 3 egg yolks
- 1/2 cup of cream
- Ladle 1/2 of fish fumet
- 50 g of mullet
- 200 g of butter
- 1 teaspoon of balsamic vinegar
