Broad beans and chicory
Instructions
Boil the beans, season with salt and pepper.
When they are well cooked to reduce them into puree.
Peel and boil the endives in salted water.
Slice the onion and FRY in a little oil.
Add the chicory well squeezed and let it stand for a few minutes.
Serve the beans and chicory in the same dish.
Ingredients and dosing for 4 persons
- 400 g of already shelled broad beans
- 600 g of chicory salad
- 2 onions
- 4 tablespoons of olive oil
- 1 tablespoon of white wine vinegar
- Salt
- Pepper
