Broad beans with ham
Instructions
Peel the beans and let them soak in fresh water. Peel the onions, wash and thinly slice them up then put them to dry in a pan with 2 tablespoons of olive oil. Cut into strips and Add ham to spring onions, leaving FRY everything gently. Add the drained beans to the mixture. Mix well and let stand for a few minutes then add the hot broth and cook over low heat for about 30 minutes, stirring occasionally with a wooden spoon. Add a little stock if the preparation were to dry excessively. Eventually the beans should be tender and dry. Before serving, sprinkle with chopped parsley, pepper liberally seasoned with a couple of tablespoons of olive oil.
