Green Beans with Tomato Sauce (Fagiolini con Salsa di Pomodoro)
Instructions
Check the beans, various privatel of wire and wash them under running water, then time in a pot with a couple of litres of boiling salted water and cook for 20-25 minutes, so that they are tender but still a little al dente.
Drain, rinse quickly under cold water to stop the cooking and preserve a bright color, and let them drain well.
Finely chop the onion and let it wilt in saucepan with the oil for a few minutes; Add the tomatoes and semi private and fragmented, add salt and pepper and simmer gently for 25 minutes.
Then, you skip the green beans in a pan with the butter, transfer to serving dish, arranging them in corona, pour the tomato sauce, garnish with parsley and serve immediately.

- 400 g of tomatoes
- 1 onion
- 3 tablespoons of olive oil
- 30 g of butter
- Salt
- Pepper
- Few sprigs of curly parsley
