Instructions
Leave the beans to soak in water for at least 2 hours, then drain.
Put them in a saucepan, cover with water, add the onion, epazote, salt and bring to a boil.
Cook until the beans are tender, adding more water if necessary.
Add salt, cover the Pan and let stand in a cool place for a day.
After this time, boil the beans for a few minutes.
Heat the cooking oil in a pan, rosolarvi the 2 slices of onion, add the beans and bring to a boil stirring constantly.
In the Mexican tradition, this procedure is repeated daily until the exhaustion of the beans.

- 900 g of dried beans
- 12 cups of water
- 1 onion cut in half
- 3 bunches of fresh epazote
- 2 tablespoons of pork lard (or olive oil)
