Fagioli all'uccelletto
Instructions
Shell beans and boil them in salted water just; If dry (just half in weight), put them to soak for 6-7 hours and then boil them.
Saute in oil 3 cloves of crushed garlic and a few leaves of Sage; before browned garlic, add the drained beans, salt and pepper and let stand for a few minutes.
At this point add the peeled tomatoes without seeds and cook slowly, stirring with a wooden spoon for about half an hour.
The beans should be dense, but not Baedekers.

- 1000 g of fresh cannellini beans
- 400 g of peeled tomatoes (or fresh ripe)
- 4 cloves of garlic
- Sage
- Olive oil
- Salt
- Pepper
