Instructions

Rinse the shrimp under running water, then place them in a saucepan with boiling salted water and boil for about 10 minutes at moderate heat.

When they are ready, drain, sgusciateli and place in a bowl.

Clean and wash thoroughly, cut asparagus tips and cook in a pot with salted water over high heat for 20 minutes.

Make toast the slices of bread in the oven, then place them in neatly on a serving dish and keep them warm.

In a pan take heat two tablespoons of olive oil and friggetevi the eggs for 5 minutes on medium heat, being careful not to break the yolks.

Gently place an egg on each slice of bread and cut all around the egg white.

In a clean Pan fry asparagus tips with the butter for a few minutes sweet heat, then sprinkle them with Parmesan cheese, flavour with salt and freshly ground pepper and place them on the sofa.

Season the shrimp with the rest of the oil, a pinch of salt, a ground pepper and the juice of one lemon, mix well then distributed the crustaceans on the eggs and serve.
