Instructions
Prepare a hot dense béchamel sauce with flour, butter and milk, add the cocoa and sugar.
Allow to cool and then combine, stirring gently, 3 egg yolks and 3 whites well mounted to snow.
Put the mixture into a baking pan previously greased baking tray, and sprinkle with powdered sugar.
Bake for 25 minutes at moderate heat.
Ingredients and dosing for 4 persons
- 70 == G white flour
- 50 g of butter
- 50 cl of whole milk
- 35 g of cocoa
- 175 g of icing sugar
- 3 eggs
