Instructions
Eviscerated, wash and dry the Cod.
Season with salt and pepper.
Line a baking sheet with aluminum foil, sprinkle the bottom with 400 g coarse salt and lay the fish on top.
Cover completely with the remaining salt and cook in preheated oven at 200 degrees for 45 minutes.
Withdrawn, break the salt crust.
Peel the red snapper, arrange them on the serving dish and season with olive oil and lemon.
Accompanying wines: Gavi DOC, Montecarlo Bianco DOC, Vermentino Di Sardegna DOC.
