Tuscan Crostini-Rai
Instructions
Take 4 grams of chicken livers.
Wash them and keep them under a little vinegar.
Saute garlic, onion, carrot, Sage (a little of everything).
Add the livers and sauté well, season with salt and pepper.
When they are fried add a little warm water and 1/4 nut, 2 tablespoons diced tomatoes and simmer until they are cooked.
Grind the whole thing with the old mill.
Put on the fire, add a handful of chopped capers finely, add a knob of butter and a few drops of vinegar.
Spread on slices of Tuscan bread strictly (not salty).

- 400 g of chicken livers
- Wine vinegar
- Garlic
- Onion
- Carrot
- Sage
- Salt
- Pepper
- Water
- 1/4 nut
- 2 tablespoons of diced tomato
- 1 handful of finely chopped capers
- 1 walnut butter
- Some slices of unsalted tuscan bread
