Croquettes au gratin to baked beans
Instructions
Put the beans to soak for about 6 hours, then put them to cook in cold water initially, 1 small onion-flavoured and with Laurel leaf 1, for about 1 hour and a half.
Drain well, rinse the Blender using the medium disk and collect the proceeds in a bowl.
Mix in an egg and two tablespoons of Parmesan cheese, add salt, pepper and spiced with a pinch of cinnamon.
Prepare bechamel sauce: melt the butter in a small saucepan, mix in the flour, taking everything on fire, then pour over, flush, warm milk, stirring with a wooden spoon because it does not form lumps.
Cook for about 10 minutes then remove from heat, add salt, add 2 tablespoons of Parmesan cheese and egg yolks one at a time, combining the next until the previous one has been well mixed.
With two spoons take a little of the mixture of beans prepared by giving it the form of a "quenelle".

Appoggiatele on a buttered oven and cover gently, one by one, with the sauce.
Go to Browning in the oven at 250 degrees for about 10 minutes, and serve hot or warm croquettes.
