Cheese Croquettes (Crocchette al Formaggio)
Instructions
Put the sauce in saucepan, 1 on moderate fire, 1 wooden spatula, let it thicken.
Remove from heat and add 1 egg first and then, one by one, 2 yolks.
Turn well and for a long time, then add the grated cheese and nutmeg; Let cool.
Take the mixture, form patties, dip in beaten egg and then in bread crumbs and FRY in hot oil.
Ingredients and dosing for 4 persons
- 180 g of grated emmenthal cheese
- 1 1/2 cups of dense béchamel
- 2 eggs
- 2 egg yolks
- Nutmeg
- 1/2 cup of breadcrumbs
- Frying oil
