Crepes suzette (3)
Instructions
Prepare the dough by mixing 250 g flour, 3 eggs, 2 cups of milk, a pinch of salt.
Add the juice of a Tangerine, 1 tablespoon of curacao (orange liqueur) and 2 tablespoons melted butter.
Leave to rest for 2 hours.
50 g butter mix with the juice of another Mandarin, zest, 1 tablespoon of curacao and 50 g of icing sugar.
Preparing ' crepes ' end, in a thick pan.
Spread over each a bit of Mandarin butter, folded in four, put them back one by one into the Pan and heat.
Arrange on a warm platter.
