Chocolate crepe
Instructions
To prepare the cracks, in a bowl mix the eggs and yolk with the cocoa, sugar, flour and cream, adding the milk.
Let batter rest for 30 minutes obtained.
Meanwhile, prepare the filling: bring to a boil the milk with the vanilla stick, then let it cool.
In a saucepan, beat 3 egg yolks with sugar, Add flour sifted with cocoa and milk; Bake in a water bath until you obtain a thick cream.
Whip the egg whites until foamy, add them to the cold cream and keep aside.
Then, stir the batter, pour a tbsp in a pan greased with butter, so velarne the bottom, let it harden, then turn on the other side and cook for a few seconds.
Proceed thus until exhausting all the batter.
Filled the cracks with the prepared cream roundtrip on a baking tray lined with baking paper and scaldatele in a hot oven at 200 degrees for about 5 minutes.
Sprinkle the crêpes with icing sugar and serve.
You can add to the cream a handful of hazelnuts.

- 2 eggs
- 1 egg yolk
- 200 g of flour
- 5 tablespoons of cream
- 10 cl of milk
- 40 g of bitter cocoa
- 1 tablespoon of sugar
- Butter
- For the filling:
- 4 eggs
- 20 g of flour
- 25 cl of milk
- 1 stick of vanilla
- 30 g of bitter cocoa
- 200 g of sugar
- 65 g of butter
- To complete:
- Icing sugar
- 1 handful of chopped hazelnuts (optional)
