Instructions
Purge the zucchini the seeds thinly and thickly stufatele, along with the chopped leeks in a little olive oil warmed with a knob of butter.
Add 100 cl vegetable broth, let boil for 15 minutes then passed to a ricer collecting the cream in a saucepan.
Let it boil, bind them with rice flour to a finger of cold milk, warm it on fire again 10 minutes then switch off and carefully fold egg yolk dissolved in 10 cl of cream; Add salt and pepper.
Separately, Brown the crab meat in a knob of butter.
Garnish the cream with the crab meat and, if desired, with bits of raw Zucchini.

- 180 g of canned crabmeat
- 100 g of leek
- 25 g of rice flour
- 1 walnut butter
- 1 egg yolk
- 1 toe of milk
- 10 cl of cream
- 100 cl of vegetable broth
- Olive oil
- Salt
- Pepper
