Instructions
Wash the zucchini and cut into chunks.
Wash the Basil and the spring onions.
Put all the vegetables in the blender with some of the broth and lemon juice and blend until obtaining a cream.
Put it on the fire with the rest of the broth and let simmer over medium heat for 20 minutes, turning often.
Season with salt and pepper.
Remove from heat when thickened.
Allow to cool and then place in the refrigerator, covered, for 2-3 hours.
Pour into a bowl and garnish with Basil.

- 1500 g of zucchini
- 150 cl of vegetable broth
- 3 spring onions
- 20 leaves basil
- 1 lemon (juice)
- Salt
- Pepper
- Olive oil
