Yellow pumpkin cream
Instructions
Sauté in 2 tablespoons oil the finely sliced onion, then add the squash and the potatoes cut into cubes, seasoning well.
Cover the vegetables with boiling salted water and cook over low heat for about 30 minutes.
Mix everything together and serve with a drizzle of raw oil and chopped parsley.
