Vegetable Cream (Crema di Verdure)
Instructions
Peel potatoes, cut into chunks, put in a saucepan with 100 cl of cold broth, bring to a boil and cook for 5 minutes.
Scrape the carrots and roughly chopping the onion and add to the saucepan, biete along with artichoke hearts cut into segments and cook for 15 minutes.
Blend everything until it becomes a cream, put in casserole dish, put on the heat and bring to a boil.
Serve with toasted bread croutons.

- 1 onion
- 600 g of biete
- 4 hearts of artichoke
- 1 great potato
- 100 cl of vegetable broth
