Aniseed Rice cream
Instructions
Together in a saucepan with milk 80 g of sugar, salt, allspice berries, vanilla bean cut lengthwise, and bring to a boil.
Add the rice and cook at low heat for about 30 minutes, stirring occasionally with a wooden spoon, turn off, remove anise and vanilla and let cool completely.
Wash the apples, dry, cut them in half, remove the core and cut in thin wedges; melt the butter in a pan, add the apples and cook to open flame for 5 minutes.
Sprinkle apples with remaining sugar and caramelize; squirt with cognac, infiammatelo with a match and, when the flame is turned off, remove the Pan from the fire.
Put apples on the bottom of four glasses, taking aside, some slice for decoration; stir the cream of rice cooking of apples and spread it in glasses, over the fruit.
Garnish with Apple slices kept aside and serve.

- 100 g of rice

- Berries = 2 = star anise
- 1 pod vanilla
- 100 g of sugar
- 2 apples delight
- 30 g of butter
- 1 dram of cognac
- 1 pinch of salt
