Potato cream with prawns
Instructions
Boil the potatoes in water for about 15 minutes.
Shell the prawns and cook for 3-4 minutes in oil.
Add salt, pepper and remove from heat, and add 2-3 drops of tabasco.
Meanwhile, crush the potatoes and seasoning them with oil, salt, tabasco sauce, tarragon and parsley.
Form with this mixture of quenelles and arrange over the prawns.
Drizzle with olive oil and balsamic vinegar.

- 6 prawns
- 3 potatoes
- 1 shallot
- 4 tablespoons of olive oil extra virgin
- 4 drops of tabasco
- 3 leaflets of tarragon
- Balsamic vinegar
- Salt
- Pepper
- Parsley
